This is my final recipe for your 3 ways with this week, and I even decided to work out the nutrition value for you lovely people (it should be noted that due to the approximations of ingredients this can only be used as a guideline)
BROCCOLI AND LEMON SOUP:
This is the final broccoli recipe for my #3wayswith broccoli: broccoli and lemon soup. This recipe is so easy and 100% vegan, I had this with bread but if you’re on a RAW diet you can just opt for an alternative to get your carbohydrates into this meal. This recipe is low calorie, low fat and zero cholestreol as well as being packed with protein!
Soup is a great way for using up ingredients that have seen better days and coming into summer, the lemon adds a refreshing kick to make this satisfying in the hot weather…to make it even more summery you could always use cold water and serve it as a gazpacho.
Ingredients (serves 2):
Approx 200g fresh broccoli (this is about half a small broccoli including the stem)
Handful of fresh spinach (approx 50g)
Juice of half a lemon (or 1tbsp)
1 clove raw garlic
1 small onion, chopped
Handful fresh herbs (dried herbs will be fine if you don’t have fresh ones)
pinch of salt
1L boiling water
The method for this recipe is so simple, simply put all the ingredients (except for the water) into a blender or liquidiser.
Add some of the water in and blend.
Keep adding water to the blender and repeating this until you reach the desired consistency. I ended up using about a litre.
Garnish with fresh lemon zest if desired.
