Another pâté post, this time it was an accident, and perhaps a slightly misleading title, as it is made more like a hummus. However, given it’s visual appearance, as well as the fact i salted it up to make it more pâté-ey, i thought i’d go with the alliterative title of pinto pâté.
I had intended to make hummus, but didn’t have any chickpeas, so got all resourceful on my cupboards and opted for pinto beans. I think pinto beans must have less water than chickpeas, as i could feel myself adding a lot more liquid than usual. But this stuff is great, and just as moreish as hummus so beware!
Ingredients (makes 1 medium sized pot):
175g tin pinto beans (came in 300g net weight can)
3 tbsp tahini
3 tbsp olive oil
1 tsp lemon juice
6 sundried tomatoes
2 tbsp water
1. Simple as blending all the ingredients in a mixer until smooth!
2. Serve with anything that usually goes with hummus or pâté! My personal fav is pitta, but go crazy with whatever you enjoy!
